1. Q: CAN I USE BROWN RICE PASTA?
A: Yes, because it is made from the whole grain.
2. Q: CAN YOU TELL ME IF BROWN RICE CAKES ARE ACCEPTABLE AS LONG AS THE ONLY INGREDIENTS ARE BROWN RICE AND SALT?
A: Yes, it is a Carbo. But don't overdo it.
3. Q: I HAVE BEEN UNSUCCESSFUL IN FINDING WHOLE WHEAT WONTONS AND WHOLE WHEAT LASAGNA NOODLES OR SPINACH LASAGNA NOODLES. EACH STORE I HAVE CALLED INCLUDES SOME WHITE FLOUR WITH SPINACH FLOUR OR THEY DO NOT CARRY WHOLE WHEAT AT ALL. I WAS WONDERING IF YOU
A: Try your local health food store. If they don't carry these items, ask if they can special order them for you.
4. Q: I HAVE FOUND A TERRIFIC TASTING PASTA MADE BY EDEN FOODS, INC., BUT I'M NOT SURE IT'S LEGAL. THE INGREDIENTS ARE: ORGANIC DURUM WHEAT, RED BELL PEPPER, PAPRIKA, SAFFRON, GARLIC, CLOVES, PEPPER.
A: Durum is the hard interior of a kernel of wheat. Durum flour, therefore, is not a whole grain flour. Any pasta you use must say "whole wheat," so I'm afraid this one is not, as you say, legal!
5. Q: I WAS RECENTLY AT A THAI RESTAURANT AND ORDERED STEAMED SHRIMP WITH VEGETABLES AND BEAN THREADS. ARE THE BEAN THREADS, WHICH LOOK LIKE CLEAR NOODLES, ALLOWED?
A: Sorry, but the bean threads are very high in carbohydrates, so they are not allowed.
6. Q: IS BASMATI RICE ALLOWED?
A: Brown basmati rice is fine. White basmati rice is a Funky Food.
7. Q: IS IT OKAY TO EAT WILD RICE ON LEVEL ONE?
A: Wild rice is a Carbo and may be eaten on Level One with Carbos and Veggies. When you graduate to Level Two, wild rice can be eaten with your Pro/Fats, in moderation. It is a much better choice than white rice, or even brown rice.
8. Q: CAN YOU EXPLAIN WHETHER DURUM WHEAT SEMOLINA, DURUM WHEAT PASTA, AND SEMOLINA PASTA ARE OK?
A: This has been a confusing issue, even for me. Here's the final say on pasta. Semolina pasta and durum wheat pasta are not okay. Durum wheat semolina is not okay. It must say "whole wheat" or whole grain. I think there is some confusion because in the Reference Guide I listed "pasta made from whole grains" then listed the different types of grains, including durum wheat. Any of the grains listed must be in their whole grain form, so durum wheat would need to be durum whole wheat. Actually durum wheat should actually come off the list, because it is technically the hard interior of the wheat kernel, and, therefore, cannot come in a whole grain form. Use your gut, if it looks too white and too good to be true, it probably is.
