Q: ARE EGG ROLLS OR WONTON WRAPPERS ALLOWED? THEY SAY WHEAT FLOUR. |
| A: If you can find the type that says whole wheat, then they are fine. For Level Two, these wheat flour wrappers are fine. |

Q: ARE YOU ALLOWED TO HAVE ENRICHED WHEAT FLOUR? |
| A: It must say whole wheat to be acceptable. Enriched wheat flour is just white flour. Look for enriched whole-wheat flour, or whole-wheat flour. |

Q: CAN I MAKE FRIED CHICKEN IF I USE WHOLE-WHEAT FLOUR? |
| A: This is fine for Level Two, but on Level One, we do not combine starches with fats. I fry foods with no flour at all and they taste delicious. You still get the flavor, just not the floury crust. Or try my Somersize Shake It and Bake It Chicken (page 234, FAST & EASY). |

Q: HOW ABOUT KING ARTHUR'S WHITE WHOLE-WHEAT FLOUR? |
| A: This flour is made from hard white wheat. The product states that it is made from 100% of the wheat germ and bran, so it would be the same as whole wheat flour. |

Q: IT IS DIFFICULT TO FIND WHOLE-WHEAT PHYLLO DOUGH. WHAT SHOULD I USE INSTEAD? |
| A: It is very difficult to find. If you are having a hard time finding whole wheat phyllo, use the regular kind in Level Two. |

Q: IS UNBLEACHED WHEAT/WHOLE-WHEAT FLOUR OKAY TO USE? |
| A: This is probably a combination of unbleached wheat flour (which is white flour) and whole wheat flour. Only the latter is okay, so I would avoid this combination. |

Q: IS WHITE UNBLEACHED ORGANIC FLOUR A FUNKY FOOD? |
| A: Sorry, its still white flour. Look for whole-grain flour, like whole-wheat flour. |

Q: WHAT IS THE SUBSTITUTE FOR FLOUR WHEN MAKING WHITE SAUCE? |
| A: I make white sauce with cream, butter, and Parmesan cheese. You may not use starch with cream sauces, because you may not combine fat with starch. |
