GUT RENEW PANCAKES
These protein-packed pancakes get a boost from Greek yogurt and Chocolate GUT RENEW! A delicious way to start your day and make your pancakes a little healthier.
- 2 cups full fat, organic Greek yogurt (plain, unsweetened)
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- Pinch sea salt
- 4 scoops Chocolate GUT RENEW Superfood Protein Formula
- 1/2 cup organic flour (gluten-free or regular)
- 1/3 cup organic whole milk (or milk of choice)
- Grapeseed oil (or any neutral oil)
Toppings:
- Butter
- Maple Syrup
- Berries
- Cut fruit
Place the Greek yogurt into a mixing bowl. Add the eggs and whisk until smooth. Whisk in the baking powder and salt. Add Chocolate GUT RENEW and flour and whisk to combine. Add the milk until desired consistency is achieved. (If the batter feels too thick, add a little more milk. If it feels too thin, add a little more flour.)
Heat a large skillet on medium high. When hot, add a thin coating of neutral oil, then ladle the batter to make 4-inch pancakes. When bubbles form on the outside edge of the pancake, about 2 minutes, flip and cook the other side for another 1-2 minutes.
Place onto plates and serve warm with your favorite toppings.
Oatmeal Chocolate Chip Cookies with Chocolate GUT RENEW
These delicious, gluten-free, vegan cookies have an extra boost of protein and gut health nutrients from the addition of Chocolate GUT RENEW Superfood Protein Formula. A wonderful way to have a healthier treat!
- ½ cup (1 stick) unsalted vegan butter (preferably Mykonos brand)
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- ½ cup olive oil
- 1 tablespoon ground cinnamon
- 1 teaspoon sea salt
- 2 teaspoons vanilla extract
- 2 cups gluten-free flour (preferable Bob’s Redmill Organic Gluten-Free Baking Mix)
- ½ cup Chocolate GUT RENEW Superfood Protein Formula
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ cup water
- 3 cups organic, gluten-free old fashioned oats
- 1 cup dark chocolate chips (preferably at least 60% cacao)
Instructions
Preheat oven to 350°F.
In an electric stand mixer fitted with the paddle attachment, add the vegan butter, brown sugar and granulated sugar. Mix on medium speed for 4-5 minutes, until smooth and fluffy. Slowly add the olive oil in a steady stream until incorporated. Add the cinnamon, salt, and vanilla and mix for 1 minute, until blended.
Add the gluten-free flour, Chocolate GUT RENEW Superfood Protein Formula, baking powder and baking soda and mix on low until the dough is blended. With the mixer on low, add water in a steady stream and blend for about 2 minutes. Add the oats and chocolate chips and blend until they are evenly distributed throughout the dough.
This dough is a little crumbly. You can create 2-3 inch balls by hand, or use a cookie scoop. Place onto a baking sheet about 3 inches apart. Flatten the tops a bit with your fingertips.
Place cookies onto the center rack and bake for about 15 minutes, until golden brown. Allow the cookies to cool on the baking sheet.
Store in airtight containers.
